🔥 Smoked Sausage and Potatoes Skillet
🧄 Ingredients:

14 oz smoked sausage (kielbasa or andouille), sliced into ¼-inch rounds

1 ½ lbs baby potatoes (or Yukon Golds), halved or diced

1 small onion, thinly sliced
-
1 bell pepper (red or green), sliced

2–3 tbsp olive oil or butter
-
2 cloves garlic, minced
-
1 tsp smoked paprika (optional, but great for depth)

Salt and black pepper, to taste

Fresh parsley for garnish (optional)
🍳 Instructions:

Cook the Potatoes:

Parboil potatoes for 5–7 minutes in salted water until just fork-tender, OR microwave with a splash of water for 6–7 minutes, covered.

Drain and set aside.

Brown the Sausage:

Heat 1 tbsp oil or butter in a large skillet over medium-high heat.

Add the sliced sausage and cook for 4–5 minutes, until browned on both sides. Remove and set aside.

Sauté Veggies:

In the same skillet, add another tbsp of oil if needed.

Cook onions and bell pepper until softened, about 4–5 minutes.

Add garlic and smoked paprika; cook 30 seconds more.

Crisp the Potatoes:

Add par-cooked potatoes to the pan. Season with salt and pepper.

Cook for 6–8 minutes, stirring occasionally, until golden and crispy.

Combine & Finish:

Return the sausage to the skillet and toss everything together.

Cook another 2–3 minutes to heat through.

Garnish with chopped parsley and serve hot.

Add chopped kale or spinach at the end for greens.
