Sausage and Potato Bake

Here’s a cozy, hearty, and super easy Sausage and Potato Bake — perfect for a no-fuss dinner that satisfies the whole family. It’s a one-pan wonder packed with roasted veggies, juicy sausage, and tons of flavor.


🥔 Sausage and Potato Bake

Serves: 4–6 | Prep Time: 10 min | Cook Time: 40–45 min


🧂 Ingredients:

  • 1 lb smoked sausage or kielbasa, sliced into ½-inch rounds

  • 1½ lbs baby potatoes (or Yukon Gold), halved or quartered

  • 1 bell pepper, sliced (any color)

  • 1 red onion, sliced

  • 2–3 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp dried thyme or Italian seasoning

  • Salt and black pepper, to taste

  • Optional: chopped parsley or fresh herbs for garnish


🔪 Instructions:

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.

  2. Prep the veggies and sausage:

    • Place sliced potatoes, bell peppers, onion, and sausage in a large bowl.

    • Drizzle with olive oil and sprinkle with garlic powder, paprika, thyme, salt, and pepper.

    • Toss everything to coat evenly.

  3. Spread on baking sheet:

    • Arrange in a single layer (use two sheets if crowded — helps it roast instead of steam).

  4. Bake for 40–45 minutes, stirring halfway through, until potatoes are tender and golden, and sausage is browned at the edges.

  5. Finish & serve:

    • Sprinkle with chopped fresh parsley or grated Parmesan if desired.

    • Serve hot as a standalone meal or with a green salad or crusty bread.


📝 Tips:

  • Want extra crisp? Broil for the last 2–3 minutes.

  • Swap smoked sausage for Italian sausage, chorizo, or even plant-based sausage.

  • Add chopped zucchini, carrots, or broccoli for more veggies.

  • Leftovers reheat great in a skillet or air fryer!
