Mom’s Chicken Marinade

Here’s a classic, flavorful, and easy Mom’s Chicken Marinade — perfect for juicy, tender chicken whether you’re grilling, baking, or pan-searing. It uses pantry staples and comes together in minutes.


🍗 Mom’s Chicken Marinade

Yields enough for: 4 boneless chicken breasts
Marinating time: 2–4 hours (or overnight for maximum flavor)


✅ Ingredients:

  • ½ cup olive oil

  • ½ cup low-sodium soy sauce

  • ¼ cup lemon juice (fresh is best)

  • 2 tablespoons Dijon or whole-grain mustard

  • 1½ teaspoons garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon black pepper

  • 1–2 teaspoons Worcestershire sauce or liquid smoke (optional, adds depth)

  • 1 tablespoon honey or brown sugar (optional for a touch of sweetness)


🔪 Instructions:

  1. Mix the Marinade:
    In a bowl or measuring cup, whisk together all ingredients until well combined.

  2. Marinate the Chicken:
    Place chicken in a zip-top bag or container. Pour marinade over the chicken, seal, and refrigerate for at least 2 hours, up to 8 hours.

    Avoid over-marinating (especially past 12 hours), as the acid from the lemon juice can start to break down the chicken too much.

  3. Cook as Desired:

    • Grill: Medium-high heat, 6–7 minutes per side

    • Oven: Bake at 400°F (200°C) for 20–25 minutes

    • Stovetop: Sear in a skillet with a little oil for 6–8 minutes per side

  4. Rest & Serve:
    Let cooked chicken rest 5 minutes before slicing.

  • Slice over salads, rice bowls, or pasta

  • Use for wraps, sandwiches, or tacos

  • Serve with roasted veggies and mashed potatoes
