🍳🥓 Air Fryer Ham and Egg Breakfast Cups
Makes 6 cups | Ready in 15–20 minutes
Ingredients:
-
6 slices of deli ham (thin but sturdy enough to hold shape)
-
6 eggs (or egg whites)
-
¼ cup shredded cheese (cheddar, mozzarella, or Swiss work well)
-
Salt and pepper, to taste
-
Optional: diced veggies (bell peppers, spinach, onions), chopped herbs, or cooked bacon bits
Instructions:
1. Prep the Cups:
-
Use a silicone muffin mold or ramekins that fit in your air fryer basket.
-
Line each mold with 1 slice of ham, gently pressing it into a cup shape.
-
Add a little cheese and any optional veggies inside the ham cup.
2. Add the Eggs:
-
Crack one egg into each ham cup (or whisk eggs first if you prefer scrambled texture).
-
Sprinkle with salt, pepper, and optional herbs.
3. Air Fry:
-
Preheat air fryer to 350°F (175°C).
-
Place the molds or ramekins into the basket.
-
Air fry for 10–13 minutes, depending on how runny or firm you like your yolks:
-
10 min = soft/runny yolk
-
12–13 min = fully cooked yolk
-
4. Serve:
-
Let cool for 1 minute, then gently lift out.
-
Garnish with parsley, hot sauce, or avocado slices if desired.
📝 Tips:
-
No silicone cups? Make small foil cups or use parchment liners.
-
Make-ahead: Refrigerate up to 4 days. Reheat in the air fryer at 325°F for 3–4 minutes.
-
For keto-friendly meal prep, pair with sliced avocado or sautéed spinach.
