Posted on July 25, 2025
Here’s a simple and flavorful recipe for Roasted Garlic Thyme Potatoes — crispy on the outside, tender on the inside, and packed with savory garlic and aromatic thyme. This dish works beautifully as a side for roasted meats, grilled dishes, or even eggs at brunch.

🥔 Roasted Garlic Thyme Potatoes

Ingredients:

  • 2 lbs (about 900g) baby potatoes or Yukon Gold, halved or quartered

  • 4–5 cloves garlic, minced (or more if you’re a garlic lover)

  • 2–3 tbsp olive oil

  • 1 ½ tsp salt

  • ½ tsp black pepper

  • 1–2 tsp fresh thyme leaves (or ½ tsp dried thyme)

  • Optional garnish: chopped fresh parsley or grated Parmesan

Instructions:

  1. Preheat oven:

    • Set to 425°F (220°C). Line a baking sheet with parchment paper or foil for easier cleanup.

  2. Prep potatoes:

    • Wash and cut potatoes into evenly sized pieces (bite-sized).

    • In a large bowl, toss potatoes with olive oil, minced garlic, thyme, salt, and pepper.

  3. Roast:

    • Spread potatoes out in a single layer on the baking sheet (cut side down for extra crispiness).

    • Roast for 25–35 minutes, flipping once halfway through, until golden brown and crispy on the edges.

  4. Serve:

    • Taste and season with extra salt or pepper if needed.

    • Garnish with chopped parsley or a sprinkle of Parmesan, if desired.

    • Serve hot.

🔁 Optional Add-Ons:

  • Add lemon zest or a squeeze of lemon juice before serving for brightness.

  • Mix in rosemary or oregano with the thyme for extra herb flavor.

  • Toss with crushed red pepper flakes for a little heat.
