🍅 Magic Tomato Salad
🕒 Total Time: 10 minutes prep + 15–30 minutes marinating
Serves: 4
🧂 Ingredients:
-
4–5 ripe tomatoes (heirloom, cherry, or vine-ripened), sliced or chopped
-
1/4 red onion, thinly sliced
-
2 cloves garlic, minced or grated
-
2 tbsp olive oil
-
1 tbsp red wine vinegar (or balsamic or sherry vinegar)
-
1 tsp sugar or honey (balances acidity)
-
Salt & freshly cracked black pepper to taste
-
1/4 tsp dried oregano (or Italian seasoning)
-
Optional: fresh basil or parsley for garnish
🔪 Instructions:
1. Combine Ingredients:
-
In a large bowl, combine tomatoes and sliced onion.
-
Add garlic, olive oil, vinegar, sugar or honey, oregano, salt, and pepper.
-
Gently toss to coat everything well.
2. Let the Magic Happen:
-
Let sit at room temperature for at least 15–30 minutes to allow flavors to meld.
-
Stir occasionally. The tomatoes will release their juices and mix with the oil and vinegar to create a natural dressing.
3. Serve:
-
Serve with crusty bread to soak up the juices, or spoon over grilled chicken, fish, or pasta.
🧄 Pro Tips:
-
Use super ripe tomatoes for best results — the juicier, the better.
-
Add crumbled feta or mozzarella pearls for a heartier version.
-
For extra zing, toss in a splash of lemon juice or a pinch of chili flakes.
Would you like a Mediterranean twist with olives and cucumber, or a spicy version with jalapeño or chili oil? I’d be happy to remix it!
