BEEF ENCHILADAS with extra cheese on top

Absolutely! Here’s a classic Beef Enchiladas recipe — rich, flavorful, and topped with extra cheese just the way you like it. These are made with a simple homemade enchilada sauce (or you can use store-bought to save time).


Cheesy Beef Enchiladas

Ingredients:

For the filling:
  • 1 lb ground beef

  • 1/2 medium onion, diced

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1/2 tsp chili powder

  • Salt and pepper, to taste

  • 1/2 cup red enchilada sauce

  • 1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)

For assembling:
  • 8–10 corn or flour tortillas

  • 2 cups red enchilada sauce (homemade or store-bought)

  • 2–3 cups shredded cheese, for topping (extra cheese, as requested!)


Instructions:

1. Make the Filling:

  • In a large skillet, cook ground beef and onion over medium heat until beef is browned and onions are soft.

  • Add garlic, cumin, chili powder, salt, and pepper. Cook for 1 more minute.

  • Stir in 1/2 cup of enchilada sauce and 1 cup of shredded cheese. Mix well and remove from heat.

2. Prepare Tortillas:

  • If using corn tortillas, warm them briefly in a skillet or microwave to soften (prevents tearing).

  • For flour tortillas, you can use them as is.

3. Assemble the Enchiladas:

  • Preheat oven to 375°F (190°C).

  • Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.

  • Fill each tortilla with a few spoonfuls of the beef mixture, roll tightly, and place seam-side down in the dish.

  • Once all are in the dish, pour remaining enchilada sauce evenly over the top.

  • Sprinkle with LOTS of shredded cheese over everything — don’t hold back!

4. Bake:

  • Cover with foil and bake for 20 minutes.

  • Uncover and bake for another 10 minutes, or until the cheese is bubbly and slightly golden.

5. Garnish and Serve:

  • Let rest for 5 minutes before serving.

  • Garnish with chopped cilantro, green onions, sour cream, or sliced jalapeños if desired.


Optional Add-ins:

  • Add black beans, diced green chiles, or corn to the beef mixture.

  • For spicier enchiladas, use a spicy enchilada sauce or add chipotle powder to the meat.
