  • 1 tbsp olive oil (for browning, optional)

  • Salt and pepper, to taste

1. (Optional) Sear the Pork Chops

  • Heat olive oil in a skillet over medium-high heat.

  • Season pork chops lightly with salt and pepper.

  • Brown on each side for 2–3 minutes (adds flavor, but not required).

2. Prepare the Potatoes

  • Wash and halve baby potatoes (or chop larger ones).

  • Place them in the bottom of the crockpot.

3. Mix the Sauce

In a bowl, whisk together:

  • Ranch seasoning

  • Cream of soup

  • Milk or broth

  • Sour cream or cream cheese (if using)

4. Layer the Crockpot

  • Pour half the sauce over the potatoes.

  • Lay pork chops on top.

  • Pour the rest of the sauce over the pork.

5. Slow Cook

  • Cover and cook on LOW for 6–7 hours or HIGH for 3½–4 hours, until pork is tender and potatoes are soft.

  • Optional: stir gently before serving to coat everything in the sauce.

6. Serve

  • Sprinkle with chopped parsley or green onions for color.
