✅ Ingredients:

For the Salad:

  • 2 cups arugula or baby spinach (or mix)

  • 1 cucumber, thinly sliced

  • 1/2 small red onion, thinly sliced (or quick-pickled)

  • 1 cup cherry tomatoes, halved

  • 1 avocado, diced

  • 1/4 cup fresh cilantro or parsley, chopped

  • 1/4 cup feta or goat cheese, crumbled (optional)

  • 1/4 cup roasted sunflower seeds or sliced almonds

For the Tangy Dressing:

  • 2 tbsp olive oil

  • 2 tbsp fresh lemon or lime juice

  • 1 tbsp apple cider vinegar or white wine vinegar

  • 1 tsp Dijon mustard

  • 1 tsp honey or maple syrup (optional)

  • Salt & black pepper to taste

  • Pinch of red pepper flakes (optional for heat)

  1. Make the dressing: Whisk together lemon juice, vinegar, mustard, honey (if using), salt, pepper, and red pepper flakes. Slowly whisk in the olive oil until emulsified.

  2. Prep the salad: In a large bowl, combine greens, cucumber, tomatoes, onion, herbs, and seeds/nuts.

  3. Dress & toss: Pour dressing over the salad and gently toss to coat. Add avocado and cheese just before serving to avoid mashing.

  4. Taste & adjust: Add more lemon or vinegar for extra tang. Top with extra herbs or seeds for crunch.
