Here’s a super simple, vibrant, and flavor-packed recipe for Easy Marinated Tomatoes — a perfect summer side dish, toast topper, or salad booster. The marinade infuses the tomatoes with herbs, garlic, and tangy goodness, making them irresistibly fresh and zesty.


🍅 Easy Marinated Tomatoes

⏱️ Prep Time: 10 min | Marinate Time: 30 min to 4 hrs (the longer, the better)


🧂 Ingredients

  • 4–5 ripe tomatoes (Roma, heirloom, or cherry tomatoes work great)

  • 2–3 tbsp extra virgin olive oil

  • 1 tbsp red wine vinegar (or balsamic or sherry vinegar)

  • 1 clove garlic, finely minced or grated

  • 1 tsp dried oregano (or use fresh, finely chopped)

  • 1 tbsp fresh basil, thinly sliced (or use parsley or dill)

  • Salt and freshly ground black pepper, to taste

  • Optional: pinch of chili flakes for heat

  • Optional: 1 tsp honey or sugar for balance (especially if using very acidic tomatoes)


🔪 Instructions

  1. Slice the Tomatoes

    • Slice large tomatoes into thick rounds or wedges.

    • Halve cherry tomatoes or leave whole if small and tender.

  2. Make the Marinade

    • In a bowl or jar, mix olive oil, vinegar, garlic, oregano, basil, salt, pepper, and chili flakes (if using).

    • Taste and adjust acidity or salt as needed. Add a touch of honey if it tastes too sharp.

  3. Combine and Chill

    • Toss the tomatoes gently with the marinade in a shallow bowl or dish.

    • Cover and let marinate at room temperature for 30–60 minutes, or in the fridge up to 4 hours for deeper flavor.

  4. Serve

    • Serve at room temperature for best taste.

    • Spoon over grilled bread, fresh mozzarella, leafy greens, or serve as-is with crusty bread.
