1/2 lb (225g) sausage meat (Italian, breakfast, or ground pork sausage)

1 cup shredded cheese (cheddar, mozzarella, gouda, or a mix)

1 tsp Dijon mustard or tomato paste (optional)

1/2 tsp garlic powder, 1/2 tsp onion powder (optional)

Salt & pepper, to taste

1 egg, beaten (for egg wash)

Fresh herbs like parsley or thyme (optional)
Instructions:

Preheat the oven:

Set to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the filling:

In a bowl, mix the sausage meat with seasonings, optional mustard/tomato paste, and shredded cheese. Stir until well combined.

Roll out the pastry:

Lightly flour your work surface and roll out the puff pastry into a rectangle (if needed).

Cut into 2 long strips (lengthwise) or leave whole if making large rolls.

Assemble the rolls:

Spoon sausage-cheese mixture in a log shape down the center of each pastry strip.

Fold one side of the pastry over the filling, then the other side to enclose it.
