Here’s a classic and delicious recipe for Fried Potatoes and Onions β€” crispy, savory, and perfect as a side or even a main dish with eggs or sausage.


πŸ₯” Fried Potatoes and Onions Recipe

Ingredients:

  • 4 medium russet or Yukon gold potatoes (peeled or unpeeled), sliced or diced

  • 1 large yellow onion, thinly sliced

  • 3–4 tbsp vegetable oil (or butter for extra flavor)

  • Salt and black pepper to taste

  • Optional: garlic powder, smoked paprika, chopped parsley


Instructions:

  1. Prep the Potatoes:

    • Slice or dice the potatoes evenly for consistent cooking. If you want extra crispiness, soak the potatoes in cold water for 20–30 minutes, then drain and dry thoroughly with a towel.

  2. Heat the Oil:

    • In a large skillet (preferably cast iron or heavy-bottomed), heat the oil over medium-high heat until shimmering.

  3. Cook the Potatoes:

    • Add the potatoes in a single layer. Let them cook undisturbed for 5–7 minutes to develop a crispy crust.

    • Stir occasionally, but avoid overmixing so they can brown nicely.

  4. Add the Onions:

    • After about 10–12 minutes, when the potatoes are starting to soften and brown, add the sliced onions.

    • Continue cooking, stirring every few minutes, for another 10–15 minutes, or until the onions are caramelized and the potatoes are golden and tender.

  5. Season and Serve:

    • Season with salt, pepper, and any optional spices. Serve hot, topped with fresh herbs if desired.


Tips:

  • Don’t overcrowd the pan β€” work in batches if needed.

  • For extra flavor, fry in bacon fat or add chopped garlic or peppers.

  • Great with fried eggs for breakfast or as a hearty dinner side.
