Here’s an easy homemade Chicken Potato Rolls recipe — soft bread rolls stuffed with a savory chicken and mashed potato filling. These are perfect for snacks, lunchboxes, or even a cozy dinner. They’re freezer-friendly and kid-approved!


🐔🥔 Easy Homemade Chicken Potato Rolls

Makes: 12 rolls

Prep Time: 30 minutes (plus dough rise time)

Cook Time: 20–25 minutes


🧂 Ingredients

For the Dough (or use store-bought pizza/bread dough):

  • 3 ½ cups all-purpose flour

  • 2 ¼ tsp instant yeast (1 packet)

  • 1 cup warm milk

  • 1 egg

  • 2 Tbsp sugar

  • 1 tsp salt

  • ¼ cup butter (softened)

For the Chicken Potato Filling:

  • 1 ½ cups cooked, shredded chicken (rotisserie or leftover)

  • 2 medium potatoes, boiled and mashed

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp black pepper

  • ½ tsp cumin (optional)

  • ½ tsp paprika or chili flakes (optional for heat)

  • 1 Tbsp oil or butter

  • Salt to taste

  • Fresh parsley or cilantro, chopped (optional)

For Topping:

  • 1 egg yolk + 1 Tbsp milk (for egg wash)

  • Sesame seeds or nigella seeds (optional)


🍳 Instructions

1. Make the Dough

  1. In a large bowl, combine warm milk, sugar, and yeast. Let sit 5 minutes until foamy.

  2. Add the egg, salt, and butter. Mix well.

  3. Gradually add flour and knead into a soft, smooth dough (about 8–10 minutes by hand or 5 in a mixer).

  4. Cover and let rise in a warm place until doubled (about 1 hour).

Shortcut: You can also use store-bought pizza or crescent dough.


2. Make the Filling

  1. In a pan, heat oil and sauté onions until soft. Add garlic and cook 30 seconds.

  2. Add shredded chicken, spices, and salt. Mix well.

  3. Stir in mashed potatoes and herbs. Let the filling cool before assembling.


3. Assemble the Rolls

  1. Preheat oven to 375°F (190°C).

  2. Punch down dough and divide into 12 balls.

  3. Roll each ball into a small circle. Place 1–2 Tbsp filling in the center.

  4. Fold and seal edges like a bun or roll. Place seam side down on a baking sheet.

  5. Brush with egg wash and sprinkle with seeds if using.


4. Bake

  • Bake for 20–25 minutes or until golden brown.

  • Cool slightly before serving. Enjoy warm or at room temperature!


🔄 Variations

  • Cheesy: Add shredded mozzarella or cheddar to the filling.

  • Spicy: Add chopped green chilies or hot sauce.

  • Air fryer: Bake at 350°F for 12–15 minutes.
