🔥 Oven Temp: 425°F / 220°C
Ingredients
-
4 medium Yukon Gold or russet potatoes
-
3 tbsp olive oil or melted butter (or a mix)
-
3 garlic cloves, minced (or 1 tsp garlic powder)
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp paprika or smoked paprika (optional)
-
1 tsp dried herbs (thyme, rosemary, oregano, or Italian mix)
Optional for serving:
-
Fresh parsley or chives, chopped
-
Grated Parmesan cheese
-
Sour cream or dipping sauce
Instructions
1. Prep the Potatoes:
-
Wash and dry the potatoes (no need to peel).
-
Slice each potato in half lengthwise.
-
Place cut side up. Using a sharp knife, score a crosshatch pattern into the flat side (cut about ¼-inch deep).
2. Season:
-
In a small bowl, mix olive oil (or butter), garlic, salt, pepper, paprika, and herbs.
-
Brush or spoon the mixture generously over the scored sides of the potatoes, making sure it gets into the cuts.
3. Bake:
-
Place potatoes cut side up on a parchment-lined or greased baking sheet.
-
Bake at 425°F (220°C) for 40–50 minutes, or until golden brown and crispy on top, and soft inside.
(Check with a fork – it should glide in easily.)
4. Finish & Serve:
-
Optionally, sprinkle with Parmesan or fresh herbs right after baking.
-
Serve hot with dipping sauce, aioli, or sour cream.
✅ Tips
-
Want extra crisp? Broil for 2–3 minutes at the end.
-
Use duck fat or bacon drippings for a gourmet touch.
-
For loaded potatoes, add shredded cheese and bacon bits during the last 10 minutes.
