Here’s a simple, cozy, and healthy recipe for Cabbage Soup — perfect for a light meal, detox day, or budget-friendly weeknight dinner. Packed with veggies and flavor! 🥬🍲


🥬 Classic Cabbage Soup

🧾 Ingredients:

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 3 carrots, sliced

  • 2 celery stalks, sliced

  • 1 small head of green cabbage, chopped (about 6 cups)

  • 1 can (14.5 oz / 400g) diced tomatoes (with juice)

  • 6 cups vegetable or chicken broth

  • 1 teaspoon dried thyme

  • 1/2 teaspoon paprika (optional)

  • Salt and pepper, to taste

  • Optional: 1 bay leaf, chili flakes for heat

  • Optional additions: green beans, zucchini, or cooked beans/lentils


👩‍🍳 Instructions:

  1. Sauté aromatics:
    Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook for 5–7 minutes, until softened. Add the garlic and cook for 1 more minute.

  2. Add remaining ingredients:
    Stir in the cabbage, diced tomatoes, broth, and seasonings. Bring to a boil.

  3. Simmer:
    Reduce heat and let simmer for 25–30 minutes, or until the cabbage and vegetables are tender.

  4. Taste and adjust:
    Add more salt, pepper, or spices as needed. Remove bay leaf if used.

  5. Serve hot, optionally with a sprinkle of fresh herbs (parsley, dill, or thyme) and a squeeze of lemon juice for brightness.


🥣 Optional Add-ins:

  • Protein: Add cooked shredded chicken, turkey sausage, or beans.

  • Grains: Stir in cooked rice, quinoa, or barley.

  • Spice it up: Add red pepper flakes, smoked paprika, or a dash of hot sauce.
