Make the pudding mixture:
In a bowl, whisk together the pudding mix and cold milk for 2 minutes until thick.
Fold in mascarpone and vanilla extract until smooth and creamy. Chill for 10 minutes. -
Soak the ladyfingers:
Combine coffee and sugar (if using). Quickly dip ladyfingers—one at a time—into coffee (1–2 seconds). Don’t let them get mushy. -
Assemble the cups:
In 4–6 small cups or jars:-
