Here’s a classic and irresistible Peanut Butter Balls recipe — rich, creamy, chocolate-dipped, and no baking required! Perfect for holidays, snacks, or sweet cravings. 🥜🍫


🍬 Peanut Butter Balls (a.k.a. Buckeyes)

🧾 Ingredients (Makes about 20–24 balls)

For the filling:

  • 1 cup creamy peanut butter

  • ¼ cup unsalted butter, softened

  • 1–2 cups powdered sugar (start with 1 cup and add until rollable)

  • ½ tsp vanilla extract

  • Pinch of salt

For the coating:

  • 1½ cups semi-sweet or dark chocolate chips

  • 1 tbsp coconut oil or shortening (for smoother coating — optional)


🥣 Instructions

1. Make the peanut butter mixture:

  1. In a bowl, mix peanut butter, butter, vanilla, and salt until smooth.

  2. Gradually add powdered sugar until the mixture is thick but rollable (not sticky).

2. Shape and chill:

  1. Roll into 1-inch balls and place on a parchment-lined tray.

  2. Chill in the fridge or freezer for 20–30 minutes (helps with dipping).

3. Melt the chocolate:

  • In a heat-safe bowl, melt chocolate chips and coconut oil together (in microwave in 30-sec bursts or over a double boiler), stirring until smooth.

4. Dip & chill:

  1. Use a toothpick or fork to dip each ball into the chocolate, fully or partially (like traditional Buckeyes).

  2. Let excess chocolate drip off, then place back on parchment.

  3. Chill again until chocolate is set (about 15 minutes in fridge).


✨ Variations & Tips

  • Use crunchy peanut butter for added texture.

  • Add crushed graham crackers or rice crispies to the filling for crunch.

  • Want it less sweet? Use less sugar and dark chocolate.

  • Store in an airtight container in the fridge for up to 2 weeks (or freeze for up to 2 months).
