Absolutely! Here’s a comforting, traditional recipe for a Fresh Pot of Beans (Frijoles de la Olla) and homemade Tortillas — simple, satisfying, and full of flavor.


🫘 Fresh Pot of Beans (Frijoles de la Olla)

Servings: 6–8
Prep Time: 10 minutes (plus soaking)
Cook Time: 1.5–2.5 hours (or ~45 min in a pressure cooker)

🧂 Ingredients:

  • 2 cups dried pinto beans (or black beans)
  • 6 cups water
  • 1/2 onion, peeled
  • 2 cloves garlic, peeled and smashed
  • 1–2 tsp salt, to taste
  • Optional: 1 bay leaf or a pinch of epazote (for flavor/digestion)

🥄 Instructions:

  1. Rinse beans thoroughly. Soak overnight or use a quick soak (boil for 2 minutes, then let sit for 1 hour).
  2. Drain and transfer beans to a large pot. Add 6 cups water, onion, garlic, and bay leaf or epazote (if using).
  3. Bring to a boil, then reduce to a simmer. Cook uncovered or partially covered for 1.5 to 2.5 hours, until tender. Add more water as needed to keep beans submerged.
  4. Once beans are soft, stir in salt to taste. Cook 10–15 minutes more.
  5. Remove onion and garlic (optional) and serve whole beans with broth — or mash them slightly for a thicker consistency.

🌮 Homemade Flour Tortillas

Makes: 12 medium tortillas
Prep Time: 15 minutes
Rest Time: 20–30 minutes
Cook Time: 15 minutes

🧂 Ingredients:

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 3 tbsp lard, shortening, or vegetable oil
  • 3/4 cup warm water

  1. In a bowl, mix flour and salt. Add lard/oil and work it in until crumbly.
  2. Gradually add warm water, mixing until a soft dough forms. Knead for about 3–5 minutes until smooth.
  3. Divide dough into 12 equal balls. Cover and let rest for 20–30 minutes.
  4. On a floured surface, roll each ball into a thin circle (about 6–8 inches).
  5. Heat a dry skillet or griddle over medium-high. Cook each tortilla for about 30 seconds per side, until it bubbles and gets light golden spots.
  6. Keep warm in a towel until serving.

  • Serve beans in bowls with tortillas on the side to dip, scoop, or wrap.
  • Add toppings like queso fresco, salsa, cilantro, or chopped onion.
