Ingredients:
-
3–4 medium russet or Yukon gold potatoes, thinly sliced
-
1 large onion, thinly sliced (yellow or sweet onions work best)

3 tbsp olive oil (or melted butter for a richer flavor)
-
1 tsp garlic powder
-
1 tsp paprika (smoked or sweet)
-
Salt and black pepper, to taste
-
Optional: chopped fresh parsley or chives for garnish
Instructions:

-
Prep a large baking sheet by lining with parchment paper or lightly greasing it.

Drizzle with olive oil, then add garlic powder, paprika, salt, and pepper. Toss everything together until well coated.
-
Spread the mixture evenly in a single layer on the baking sheet.
-
Bake for 35–45 minutes, flipping or stirring halfway through, until potatoes are golden brown and crispy on the edges, and onions are caramelized.
-
Optional: Broil for an extra 2–3 minutes at the end if you want extra crispiness.
-
Garnish and serve hot!
🔁 Variations:
-
Add sliced bell peppers for a color and flavor boost.
-
Sprinkle with grated Parmesan during the last 5 minutes of baking.
-
