🌶️ Green Chile Picadillo
📝 Ingredients:

1 lb ground beef (or ground turkey or pork)

1 small onion, finely diced

2–3 cloves garlic, minced
-
2 medium potatoes, peeled and diced small
-
1 cup roasted green chiles, chopped (Hatch or Anaheim preferred)
-
1 small tomato, diced (optional)
-
½ teaspoon ground cumin
-
½ teaspoon oregano
-
Salt and pepper, to taste
-
½ cup beef or chicken broth (or water)

2 tablespoons oil
🔥 Directions:
1. Cook the Potatoes

In a large skillet, heat oil over medium heat.

Add diced potatoes and cook for 8–10 minutes, stirring occasionally, until golden and beginning to soften. Remove and set aside.
2. Sauté the Aromatics

In the same pan, add onion and garlic. Cook for 2–3 minutes until fragrant and softened.
3. Brown the Meat

Add ground beef and cook until browned. Break up with a spoon as it cooks.

Drain excess fat if needed.
4. Season & Simmer

Stir in cumin, oregano, salt, pepper, and chopped green chiles.

Add back the cooked potatoes, tomato (if using), and broth.

Simmer uncovered for 10–15 minutes, until potatoes are tender and mixture thickens slightly.
5. Taste & Serve

Adjust seasoning as needed.

Serve hot with warm tortillas, Spanish rice, or beans.
