Mashed Potato Puffs

Here’s a fun and delicious recipe for Mashed Potato Puffs — crispy on the outside, creamy on the inside, and perfect for using up leftover mashed potatoes!


🧀 Mashed Potato Puffs (Baked or Air Fried)

Ingredients:

  • 2 cups cold mashed potatoes (leftovers work great)

  • 1 large egg

  • ½ cup shredded cheese (cheddar, mozzarella, or a mix)

  • 2 tbsp grated Parmesan (optional, for extra flavor)

  • 2 tbsp chopped green onions or chives

  • Salt and pepper to taste

  • Optional: bacon bits, garlic powder, herbs

  • Butter or oil spray (for greasing)


Instructions (Oven or Air Fryer):

🔪 1. Preheat:
  • Oven: 400°F (200°C)

  • Air Fryer: 375°F (190°C)

🥣 2. Mix:

In a bowl, combine:

  • Mashed potatoes

  • Egg

  • Cheese

  • Green onions/chives

  • Seasonings (salt, pepper, garlic powder, etc.)

Mix well until fully combined. The mixture should be thick and scoopable.

🧁 3. Fill:
  • Lightly grease a mini muffin tin (for oven) or form small scoops or patties for air frying.

  • Spoon the mixture into muffin wells, filling nearly to the top.

🔥 4A. Bake (Oven):
  • Bake for 20–25 minutes until golden brown and puffed.

🍃 4B. Air Fry:
  • Form into 1½-inch balls or patties.

  • Spray with oil and air fry in a single layer for 10–12 minutes, flipping halfway, until golden and crispy.

✨ 5. Serve Warm:
  • Serve as a side dish, snack, or appetizer.

  • Optional toppings: sour cream, more cheese, herbs, or hot sauce.


🧊 Storage & Reheat:

  • Fridge: Store in an airtight container for up to 3 days.

  • Reheat: In oven or air fryer at 350°F until warmed through.
