Hereโ€™s a classic Mexican Carne Asada marinade recipe that delivers bold, authentic flavor โ€” perfect for grilling steak like skirt, flank, or ribeye:

  • 1/3 cup orange juice (freshly squeezed is best)

  • 1/4 cup lime juice (about 2โ€“3 limes)

  • 1/4 cup soy sauce

  • 1/4 cup olive oil

  • 4 cloves garlic, minced

  • 1/2 cup fresh cilantro, chopped

  • 1โ€“2 chipotle peppers in adobo sauce, chopped (optional for smoky heat)

  • 1 tbsp white vinegar or apple cider vinegar

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • 1 tsp paprika

  • 1 tsp black pepper

  • 1/2 tsp dried oregano

  • Salt, to taste (start with 1โ€“1.5 tsp)

  1. Combine all ingredients in a bowl or blender. If using a blender, pulse briefly until mostly smooth but still a bit textured.

  2. Place steak in a resealable plastic bag or shallow dish and pour marinade over it. Ensure the meat is fully coated.

  3. Marinate for 2โ€“8 hours in the refrigerator (longer = deeper flavor, but avoid over 12 hours for acidic marinades).

  4. Remove from marinade, pat dry, and grill over high heat to your desired doneness. Rest the steak for 5โ€“10 minutes before slicing against the grain.
