Baked Broccoli Cheese Balls

Here’s a tasty and healthier twist on a party favorite: Baked Broccoli Cheese Balls! These are crispy on the outside, cheesy and tender on the inside — perfect as a snack, appetizer, or lunchbox filler. Baking them instead of frying keeps them light without sacrificing flavor.


🧾 Ingredients (Makes ~18 balls)

  • 2 cups finely chopped steamed broccoli (fresh or frozen, well-drained)

  • 1 large egg

  • 1 cup shredded cheddar cheese (or a blend with mozzarella)

  • ⅓ cup grated Parmesan cheese

  • ½ cup breadcrumbs (panko or regular)

  • ¼ cup finely chopped onion (or green onions)

  • 1 clove garlic, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp paprika (optional)

  • Optional: a pinch of red pepper flakes for a bit of heat


👨‍🍳 Instructions

1. Preheat Oven

  • Preheat your oven to 400°F (200°C).

  • Line a baking sheet with parchment paper or lightly greased foil.

2. Mix Ingredients

  • In a large bowl, combine the chopped broccoli, cheddar, Parmesan, breadcrumbs, onion, garlic, egg, and spices.

  • Mix well until everything is evenly incorporated. If the mixture is too loose, add a few more tablespoons of breadcrumbs.

3. Form the Balls

  • Using your hands or a small scoop, form mixture into golf ball-sized portions (~1½ inches).

  • Place them spaced out on the prepared baking sheet.

4. Bake

  • Bake for 22–25 minutes, flipping halfway through, until golden brown and slightly crisp on the outside.

Optional: Crispier Version

  • Spray lightly with oil before baking for a crunchier finish.


🍽️ Serving Suggestions

  • Serve with:

    • Ranch, sriracha mayo, or yogurt dip

    • Marinara sauce for a cheesy Italian-style snack

  • Great as a side dish, appetizer, or in lunchboxes!

  • Add protein: Mix in finely chopped cooked chicken or turkey.

  • Make it gluten-free: Use gluten-free breadcrumbs or crushed rice crackers.

  • Swap cheeses: Try Gruyère, Monterey Jack, or feta for different flavor profiles.
