🍋 Air Fryer Lemon Bars
🛒 Ingredients (makes about 9 small bars)
For the crust:

1 cup (125g) all-purpose flour

¼ cup (50g) granulated sugar

½ cup (115g) unsalted butter, melted

Pinch of salt
For the lemon filling:

2 large eggs
-
¾ cup (150g) granulated sugar

2 tbsp (15g) all-purpose flour
-
Zest of 1 lemon
-
¼ cup (60 ml) fresh lemon juice
-
Optional: ½ tsp vanilla extract
-
Powdered sugar for dusting
🔧 Equipment:

Air fryer (basket or oven-style)
-
6×6 or 7×7 inch baking pan that fits your air fryer (metal or silicone works best)

Parchment paper (optional for easy removal)
👩🍳 Instructions:
1. Prepare the crust:

In a bowl, mix flour, sugar, melted butter, and salt until combined and crumbly.

Press the mixture firmly into the bottom of your prepared baking pan (lined with parchment if desired).

Place in your air fryer and bake at 320°F (160°C) for 10–12 minutes, or until lightly golden.

Remove and let cool slightly.
2. Make the lemon filling:

Whisk together eggs, sugar, flour, lemon juice, zest, and vanilla (if using) until smooth and well combined.

Pour the filling over the cooled crust.
3. Bake the bars:

Return the pan to the air fryer and cook at 300°F (150°C) for 12–15 minutes, or until the filling is just set and no longer jiggles in the center.

Let cool completely in the pan, then refrigerate for 1–2 hours for easier cutting.
4. Finish and serve:

Once chilled, dust with powdered sugar and slice into squares or rectangles.

If the top starts to brown too quickly, cover loosely with foil halfway through.
