🍳 Mexican Picadillo Recipe
Ingredients:

1 lb ground beef (or a mix of beef and pork)

2 tbsp oil

1/2 white onion, finely chopped

2 cloves garlic, minced

2 medium tomatoes, diced (or 1/2 cup canned crushed tomatoes)

1 small potato, diced small

1 carrot, diced (optional)

1/4 cup peas (optional)

1/4 cup raisins (optional, adds sweetness)

Salt and pepper to taste

1/2 tsp cumin
-
1/2 tsp oregano
-
1 bay leaf
-
1/4 cup water or broth
Optional Add-ins:

Chopped olives or capers for brininess

A splash of tomato sauce or chipotle for richness or spice
Instructions:

Heat oil in a large skillet over medium heat. Add onion and cook until translucent.

Add garlic and sauté 30 seconds more.

Add ground beef. Cook until browned, breaking it up as it cooks. Drain excess fat if needed.

Stir in tomatoes, potatoes, carrots, and seasonings (cumin, oregano, bay leaf, salt, pepper). Mix well.

Add raisins, olives, or peas if using. Pour in a bit of water or broth. Cover and simmer for 10–15 minutes, stirring occasionally, until potatoes are tender.

Adjust seasoning to taste. Simmer uncovered for a few minutes if it’s too saucy.
