🧅 Ingredients
For the Patty Melts (4 servings):

1 lb ground beef (80/20 for juiciness)

Salt and black pepper, to taste

8 slices of rye or sourdough bread

8 slices of Swiss or American cheese

2 large yellow onions, thinly sliced

4 tbsp butter (plus more for bread)

Optional: pickles for extra zing
For the Secret Sauce:

1/2 cup mayonnaise

2 tbsp ketchup

1 tbsp Dijon mustard

1 tbsp sweet pickle relish

1 tsp Worcestershire sauce

1/2 tsp garlic powder

1/4 tsp smoked paprika (optional)
🍳 Instructions
1. Make the Secret Sauce:
In a small bowl, mix all the sauce ingredients together until smooth. Refrigerate while you cook the rest — it gets better as it sits!
2. Caramelize the Onions:

In a skillet over medium-low heat, melt 2 tbsp butter.

Add onions and cook slowly for 25–30 minutes, stirring occasionally, until golden and soft. Season with a pinch of salt.
3. Shape and Cook the Patties:

Divide beef into 4 thin, wide patties (roughly bread-sized).

Season with salt and pepper.

In a skillet over medium-high heat, cook patties for 3–4 minutes per side until just cooked through. Set aside.
4. Assemble the Patty Melts:

Spread secret sauce on one side of each slice of bread.

On 4 slices: layer cheese, patty, caramelized onions, more cheese (for extra meltiness), then top with the second slice, sauce-side down.

Butter the outside of the bread lightly.
5. Grill the Sandwiches:

In a skillet or on a griddle over medium heat, grill each sandwich 3–4 minutes per side, pressing gently with a spatula until golden brown and the cheese melts.

Slice diagonally and serve with crispy fries or a dill pickle spear. The sauce also makes a great dip on the side!
