Patty Melts With Secret Sauce

Here’s a delicious Patty Melt with Secret Sauce recipe — a perfect blend of juicy beef, melted cheese, caramelized onions, and a tangy, savory sauce, all grilled between slices of buttery bread. Let’s dive in!


🧅 Ingredients

For the Patty Melts (4 servings):

  • 1 lb ground beef (80/20 for juiciness)

  • Salt and black pepper, to taste

  • 8 slices of rye or sourdough bread

  • 8 slices of Swiss or American cheese

  • 2 large yellow onions, thinly sliced

  • 4 tbsp butter (plus more for bread)

  • Optional: pickles for extra zing

For the Secret Sauce:

  • 1/2 cup mayonnaise

  • 2 tbsp ketchup

  • 1 tbsp Dijon mustard

  • 1 tbsp sweet pickle relish

  • 1 tsp Worcestershire sauce

  • 1/2 tsp garlic powder

  • 1/4 tsp smoked paprika (optional)


🍳 Instructions

1. Make the Secret Sauce:

In a small bowl, mix all the sauce ingredients together until smooth. Refrigerate while you cook the rest — it gets better as it sits!

2. Caramelize the Onions:

  • In a skillet over medium-low heat, melt 2 tbsp butter.

  • Add onions and cook slowly for 25–30 minutes, stirring occasionally, until golden and soft. Season with a pinch of salt.

3. Shape and Cook the Patties:

  • Divide beef into 4 thin, wide patties (roughly bread-sized).

  • Season with salt and pepper.

  • In a skillet over medium-high heat, cook patties for 3–4 minutes per side until just cooked through. Set aside.

4. Assemble the Patty Melts:

  • Spread secret sauce on one side of each slice of bread.

  • On 4 slices: layer cheese, patty, caramelized onions, more cheese (for extra meltiness), then top with the second slice, sauce-side down.

  • Butter the outside of the bread lightly.

5. Grill the Sandwiches:

  • In a skillet or on a griddle over medium heat, grill each sandwich 3–4 minutes per side, pressing gently with a spatula until golden brown and the cheese melts.


🔥 Serving Tip

Slice diagonally and serve with crispy fries or a dill pickle spear. The sauce also makes a great dip on the side!
