Cheesy Mashed Potato Muffins

Here’s a fun and delicious twist on mashed potatoes: Cheesy Mashed Potato Muffins! These little savory muffins are crispy on the outside, fluffy and cheesy on the inside — perfect as a side dish, snack, or even a way to use up leftover mashed potatoes.


🧀 Cheesy Mashed Potato Muffins

Ingredients:

  • 2 cups mashed potatoes (leftover or freshly made, room temp)

  • 1 large egg

  • ½ cup shredded cheddar cheese (or a mix: mozzarella, gouda, parmesan, etc.)

  • ¼ cup grated Parmesan cheese (optional, for added flavor)

  • 2 tablespoons chopped green onions or chives

  • ¼ cup breadcrumbs (plus more for topping, optional)

  • Salt & black pepper, to taste

  • Cooking spray or butter, for greasing muffin tin


🔪 Instructions:

1. Preheat Oven:

  • Preheat to 400°F (200°C).

  • Grease or spray a standard muffin tin (makes about 6–8 muffins).

2. Mix the Ingredients:

  • In a large bowl, combine mashed potatoes, egg, cheeses, green onions, breadcrumbs, salt, and pepper.

  • Mix until everything is well incorporated. Mixture should be thick enough to hold its shape.

3. Scoop & Fill:

  • Spoon the mixture into the muffin tin, pressing down gently to fill each cup.

  • Optional: Sprinkle a little extra cheese or breadcrumbs on top for a crispy finish.

4. Bake:

  • Bake for 20–25 minutes, or until golden brown on top and set in the center.

  • Let cool for 5 minutes before removing from the pan.

5. Serve:

  • Serve warm with sour cream, ketchup, or gravy on the side — or just enjoy as-is!


✅ Tips:

  • Add cooked bacon bits, sautéed onions, or finely chopped spinach for variations.

  • Use silicone muffin cups for easy removal.

  • These freeze well — reheat in the oven or air fryer to crisp them back up.
