Sweet potato waffles

Here’s a cozy and slightly sweet recipe for Sweet Potato Waffles — perfect for breakfast, brunch, or even dinner with fried chicken or maple-glazed bacon!


🧇 Sweet Potato Waffles

Ingredients:

  • 1 cup mashed sweet potato (about 1 medium potato, cooked & mashed)

  • 1½ cups all-purpose flour (or use 1 cup flour + ½ cup whole wheat flour)

  • 2 tablespoons brown sugar

  • 2 teaspoons baking powder

  • ½ teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • ¼ teaspoon salt

  • 1¼ cups milk (dairy or non-dairy)

  • 2 eggs

  • 4 tablespoons (½ stick) melted butter or oil

  • 1 teaspoon vanilla extract


🔪 Instructions:

1. Prep the Sweet Potato:

  • Roast, boil, or microwave a sweet potato until tender. Mash and let it cool slightly.

2. Mix Dry Ingredients:

  • In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.

3. Mix Wet Ingredients:

  • In another bowl, whisk the mashed sweet potato, milk, eggs, melted butter, and vanilla.

4. Combine:

  • Add the wet ingredients to the dry. Stir just until combined — don’t overmix. Batter will be thick.

5. Cook the Waffles:

  • Preheat your waffle iron and lightly grease it.

  • Pour batter into the iron and cook according to manufacturer’s instructions (usually 3–5 minutes per waffle).

6. Serve:

  • Serve warm with butter, maple syrup, pecans, whipped cream, or even fried chicken!


✅ Tips:

  • Add chopped pecans or mini chocolate chips to the batter for extra texture.

  • Make them ahead and freeze — just pop in the toaster to reheat.

  • Use pumpkin spice instead of cinnamon + nutmeg for a shortcut fall flavor.
