Here’s a classic and hearty way to prepare a Beef Chuck Roast — slow-cooked to tender perfection with rich flavor, ideal for a comforting meal.


🥩 Classic Slow-Cooked Beef Chuck Roast

Ingredients:

  • 3–4 lb (1.4–1.8 kg) beef chuck roast

  • 2 tablespoons olive oil

  • Salt and black pepper, to taste

  • 1 teaspoon garlic powder (or 2 cloves fresh garlic, minced)

  • 1 teaspoon onion powder

  • 1 teaspoon dried thyme (or rosemary)

  • 1 tablespoon Worcestershire sauce

  • 1 medium onion, sliced

  • 3–4 carrots, cut into large chunks

  • 3–4 potatoes, cut into chunks

  • 2 cups beef broth (or 1 cup broth + 1 cup red wine)


🔪 Instructions:

1. Season the Roast:

  • Pat roast dry with paper towels.

  • Rub with salt, pepper, garlic powder, onion powder, and thyme.

2. Sear (Optional but Recommended):

  • Heat olive oil in a large skillet over medium-high heat.

  • Sear roast on all sides until nicely browned (about 3–4 minutes per side). This adds flavor.

3. Assemble in Slow Cooker (or Dutch Oven):

  • Place sliced onions on the bottom.

  • Add seared roast on top.

  • Scatter carrots and potatoes around the roast.

  • Pour in beef broth and Worcestershire sauce.

4. Cook Low and Slow:

  • Slow cooker: Cook on low for 8–10 hours or high for 4–6 hours, until roast is fork-tender.

  • Oven method: Cover and cook in a Dutch oven at 300°F (150°C) for 3.5–4 hours.

5. Serve:

  • Slice or shred roast and serve with veggies and pan juices.

  • Optional: thicken juices with a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) for gravy.


✅ Tips:

  • Chuck roast is ideal because of its marbling — it gets super tender when slow-cooked.

  • You can also add celery, mushrooms, or parsnips for more veggie variety.

  • Leftovers make great sandwiches or beef stew!
