🥒 Marinated Cucumbers, Onions, and Tomatoes Recipe

Ingredients:

  • 2 medium cucumbers, sliced thin (peeled if desired)

  • 3 medium tomatoes, cut into wedges or thick slices

  • 1 small red or yellow onion, thinly sliced

  • ½ cup white vinegar (or apple cider vinegar for a slightly sweeter flavor)

  • ¼ cup water

  • 2 tablespoons olive oil (optional for richness)

  • 1 tablespoon sugar (adjust to taste)

  • 1 teaspoon salt

  • ½ teaspoon freshly ground black pepper

  • ¼ teaspoon garlic powder or 1 garlic clove, minced (optional)

  • Fresh herbs (like dill, parsley, or basil), chopped (optional)


Instructions:

  1. Combine the vegetables:

    • In a large bowl, mix together the sliced cucumbers, tomatoes, and onions.

  2. Make the marinade:

    • In a separate bowl or jar, whisk together the vinegar, water, olive oil (if using), sugar, salt, pepper, and garlic.

  3. Toss and marinate:

    • Pour the marinade over the vegetables and toss well to coat evenly.

    • Cover and refrigerate for at least 2 hours, preferably overnight, for the best flavor.

  4. Serve chilled:

    • Toss again before serving. Garnish with fresh herbs if using.


✅ Tips:

  • This salad keeps well in the fridge for 3–5 days.

  • If using very juicy tomatoes, reduce the water slightly.

  • Add a pinch of red pepper flakes for a little kick.
