🍽️ Smothered Chicken with Creamed Spinach, Bacon & Mushrooms

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts or thighs

  • Salt & pepper, to taste

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 2 tablespoons olive oil

For the Toppings:

  • 4 slices bacon, chopped

  • 8 oz mushrooms, sliced (white or cremini)

  • 3 cloves garlic, minced

  • 2 cups baby spinach

  • ½ cup heavy cream

  • ¼ cup chicken broth

  • ½ cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning

  • Optional: shredded mozzarella or Gruyère for extra melt


Instructions:

1. Cook the Bacon:

  • In a large skillet, cook chopped bacon over medium heat until crispy.

  • Remove and set aside on a paper towel. Leave about 1 tablespoon of the bacon fat in the pan.

2. Sear the Chicken:

  • Season chicken with salt, pepper, garlic powder, and paprika.

  • Heat olive oil in the skillet. Add chicken and sear on both sides until golden brown and cooked through (about 5–6 minutes per side depending on thickness).

  • Remove and set aside.

3. Sauté Mushrooms & Spinach:

  • In the same skillet, add mushrooms. Sauté for 4–5 minutes until browned.

  • Add garlic and cook for 30 seconds.

  • Add spinach and stir until wilted.

4. Make the Cream Sauce:

  • Stir in heavy cream, chicken broth, Parmesan, and Italian seasoning.

  • Let simmer for 2–3 minutes until slightly thickened.

  • Add bacon back to the skillet.

5. Smother the Chicken:

  • Return chicken to the pan, nestling into the creamy mixture.

  • Spoon sauce over the chicken and simmer on low for 3–5 minutes.

  • Optional: Top with shredded cheese and cover until melted.

  • Serve over mashed potatoes, rice, or with crusty bread to soak up the sauce.

  • Make it low-carb: serve with cauliflower mash or sautéed zucchini.

  • Use chicken thighs for extra tenderness and flavor.
