4 bone-in, skin-on chicken thighs or drumsticks (or 2 large breasts, cut in half)

1.5 lbs potatoes (Yukon Gold or red), chopped into chunks

Preheat oven to 400°F (200°C). Lightly grease a 9×13″ baking dish or sheet pan.

Season potatoes:
Toss chopped potatoes and sliced onions with half the olive oil, half the salt, pepper, paprika, and herbs. Spread them in the baking dish. -
Prep chicken:
Rub chicken with remaining olive oil and season with remaining salt, pepper, paprika, garlic powder, and thyme. -
Assemble:
Nestle chicken pieces into the potatoes. Sprinkle minced garlic evenly over the dish. -
Bake uncovered for 45–55 minutes, until chicken reaches 165°F (74°C) and skin is golden and crisp, and potatoes are fork-tender.
