Chicken and Potato Bake

Here’s a delicious, hearty Chicken and Potato Bake — a one-pan comfort food classic that’s super easy to make with just a few ingredients. Perfect for busy weeknights!


🍗 Chicken and Potato Bake

Servings: 4–6

Cook Time: 45–55 minutes
Total Time: ~1 hour 10 minutes


🥔 Ingredients

  • 4 bone-in, skin-on chicken thighs or drumsticks (or 2 large breasts, cut in half)

  • 1.5 lbs potatoes (Yukon Gold or red), chopped into chunks

  • 1 small onion, sliced (optional)

  • 3–4 cloves garlic, minced

  • 3 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • 1 tsp dried thyme or rosemary

  • ½ tsp garlic powder

  • Optional: grated Parmesan, lemon wedges, or chopped parsley for serving


👩‍🍳 Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9×13″ baking dish or sheet pan.

  2. Season potatoes:
    Toss chopped potatoes and sliced onions with half the olive oil, half the salt, pepper, paprika, and herbs. Spread them in the baking dish.

  3. Prep chicken:
    Rub chicken with remaining olive oil and season with remaining salt, pepper, paprika, garlic powder, and thyme.

  4. Assemble:
    Nestle chicken pieces into the potatoes. Sprinkle minced garlic evenly over the dish.

  5. Bake uncovered for 45–55 minutes, until chicken reaches 165°F (74°C) and skin is golden and crisp, and potatoes are fork-tender.
    (For crispier skin, broil the last 2–3 minutes.)

  6. Optional garnish:
    Squeeze fresh lemon juice over the top, sprinkle with Parmesan or parsley before serving.


✅ Tips & Variations

  • Add veggies: Carrots, green beans, or bell peppers roast up beautifully with it.

  • Boneless chicken cooks faster — reduce bake time to ~35–40 minutes.

  • Creamy version: Add a can of cream of chicken soup + ½ cup milk, pour over before baking.
