🥄 Ingredients

  • 2 cups all-purpose flour

  • ½ tsp salt

  • ¾ tsp baking powder

  • 3 tbsp vegetable oil, olive oil, or melted shortening

  • ¾ cup warm water (plus a little more if needed)

  1. Mix dry ingredients:
    In a large bowl, whisk together the flour, salt, and baking powder.

  2. Add oil and water:
    Pour in the oil and warm water. Stir until a shaggy dough forms.

  3. Knead the dough:
    Knead on a lightly floured surface for 3–5 minutes until smooth and elastic.
    (Or use a stand mixer with the dough hook.)

  4. Rest the dough:
    Cover with a damp towel or plastic wrap and let it rest for 20 minutes. This helps the gluten relax for easier rolling.

  5. Divide and roll out:
    Divide dough into 8–12 equal balls. Roll each one into a thin circle (about 6–8 inches wide), dusting with flour as needed.

  6. Cook the tortillas:
    Heat a dry skillet (cast iron is great) over medium-high heat.
    Cook each tortilla for about 30–45 seconds per side, until it bubbles and has golden spots.

  7. Keep warm:
    Stack cooked tortillas in a clean kitchen towel to stay warm and soft.
