Here’s a simple and tasty recipe for Air Fryer Crispy Potato Pancakes—all the crunch with less oil! These are golden, savory, and perfect as a snack, side dish, or breakfast treat.

🕒 Cook Time: 12–15 minutes

🍽️ Servings: 4 (about 8 pancakes)


✅ Ingredients:

  • 2 cups grated raw potatoes (about 2 medium russets)

  • ½ small onion, grated or finely chopped

  • 1 egg

  • 2 tbsp all-purpose flour

  • ½ tsp garlic powder (optional)

  • ½ tsp salt

  • ¼ tsp black pepper

  • Olive oil spray


👩‍🍳 Instructions:

1. Prep the Potatoes:

  • Peel and grate the potatoes.

  • Place them in a clean kitchen towel or cheesecloth and squeeze out all excess liquid—this is key for crispiness!

2. Mix the Batter:

  • In a large bowl, combine grated potatoes, onion, egg, flour, salt, pepper, and garlic powder.

  • Mix until everything is evenly combined.

3. Form the Pancakes:

  • Shape mixture into small patties, about 3 inches wide and ½ inch thick.

4. Air Fry:

  • Preheat air fryer to 375°F (190°C).

  • Lightly spray both the air fryer basket and the patties with olive oil.

  • Place pancakes in a single layer (you may need to work in batches).

  • Air fry for 6–8 minutes per side, flipping halfway, until golden brown and crispy.

5. Serve:

  • Serve hot with sour cream, applesauce, or a sprinkle of chives.


💡 Tips:

  • To keep warm between batches, place cooked pancakes on a baking sheet in a 200°F (95°C) oven.

  • Add shredded zucchini or carrots for a veggie-packed twist.

  • For extra crisp edges, make patties thinner and don’t overcrowd the air fryer.
