German Potato Pancakes

Here’s a classic recipe for German Potato Pancakes (called Kartoffelpuffer or Reibekuchen in German). These crispy, golden pancakes are simple, savory, and delicious—often served with applesauce or sour cream!


🥔 German Potato Pancakes (Kartoffelpuffer)

🕒 Prep Time: 15 minutes

⏱️ Cook Time: 15–20 minutes

🍽️ Servings: 4 (makes about 8–10 pancakes)


✅ Ingredients

  • 2 lbs (about 900g) russet or starchy potatoes, peeled

  • 1 small onion

  • 2 large eggs

  • 3 tablespoons all-purpose flour

  • 1 tsp salt

  • ¼ tsp black pepper

  • Oil for frying (vegetable, canola, or sunflower)


🔪 Instructions

1. Grate Potatoes & Onion

  • Grate the potatoes and onion using a box grater or food processor.

  • Place the mixture in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible (this is key for crispiness).

2. Mix the Batter

  • In a large bowl, combine the grated potatoes and onion with eggs, flour, salt, and pepper. Mix well until combined.

3. Heat Oil

  • Heat about ¼ inch of oil in a large skillet over medium to medium-high heat until shimmering.

4. Fry the Pancakes

  • Drop spoonfuls of the potato mixture into the hot oil and flatten with the back of a spatula to form thin pancakes.

  • Fry for 3–4 minutes per side, or until golden brown and crispy.

  • Transfer to a paper towel-lined plate to drain excess oil.

5. Serve Hot

  • Serve immediately with applesauce, sour cream, or a sprinkle of chives.


🍴 Serving Suggestions

  • Traditional: With homemade applesauce or lingonberry jam.

  • Savory: Topped with smoked salmon, crème fraîche, or a poached egg.

  • Party version: Make mini-pancakes for appetizers.
