🍝 Italian Drunken Noodles Recipe
🧄 Ingredients:

12 oz wide egg noodles (or pappardelle)

1 lb Italian sausage (mild or hot, removed from casing)

1 tbsp olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium onion, thinly sliced

4 cloves garlic, minced
-
1 tsp red pepper flakes (adjust to taste)

1/2 cup dry white wine (like Pinot Grigio or Sauvignon Blanc)

1 (14.5 oz) can diced tomatoes (with juice)

1 tsp Italian seasoning
-
Salt and pepper, to taste

Fresh basil, chopped (for garnish)

Freshly grated Parmesan (optional)
🔪 Instructions:

Cook the Noodles:

Boil noodles according to package directions. Drain and set aside, reserving ½ cup of pasta water.

Cook the Sausage:

In a large skillet, heat olive oil over medium heat.

Add sausage and cook until browned, breaking it up with a spoon. Remove sausage from the pan and set aside.

Sauté the Veggies:

In the same skillet, add sliced onions and bell peppers. Sauté until softened, about 5 minutes.

Add garlic and red pepper flakes; cook for 1 more minute.

Deglaze & Simmer:

Pour in the white wine to deglaze the pan. Scrape up any brown bits.

Add diced tomatoes with juice, Italian seasoning, salt, and pepper.

Return the sausage to the pan. Simmer uncovered for 5–10 minutes to let the flavors blend.

Combine with Noodles:

Add the cooked noodles to the sauce and toss to coat. Add a bit of reserved pasta water if it needs loosening.
