🧅 Italian Coated Pearl Onions

Ingredients:

  • 1 lb (450g) pearl onions, peeled

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 cup crushed tomatoes (or tomato sauce)

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1/2 tsp red pepper flakes (optional)

  • Salt and pepper, to taste

  • Fresh parsley or basil, chopped (for garnish)

  • Grated Parmesan cheese (optional)


Instructions:

  1. Prep Pearl Onions:

    • To peel easily: blanch onions in boiling water for 1 minute, then transfer to ice water. The skins should slip off easily.

  2. Cook Pearl Onions:

    • Heat olive oil in a skillet over medium heat.

    • Add pearl onions and sauté for 5–7 minutes until lightly browned.

  3. Add Garlic & Herbs:

    • Add minced garlic, oregano, basil, and red pepper flakes. Cook 1–2 minutes until fragrant.

  4. Simmer in Tomato Sauce:

    • Stir in crushed tomatoes, salt, and pepper.

    • Reduce heat to low and simmer for 15 minutes, stirring occasionally, until onions are tender and sauce thickens.

  5. Serve:

    • Garnish with fresh herbs and grated Parmesan if desired.

    • Serve warm as a side dish or antipasto.
