Here’s a delicious and simple recipe for Crispy Potato & Cheese Bombs with Garlic Butter – golden, crunchy on the outside, cheesy and soft inside, with a rich garlicky finish. Perfect as an appetizer or indulgent snack!


🧀 Crispy Potato & Cheese Bombs with Garlic Butter

Ingredients:

For the Potato Bombs:

  • 3 medium potatoes, peeled and boiled
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional, for a smoky kick)
  • 2 tbsp cornstarch or all-purpose flour (helps with binding)
  • 100g (3.5 oz) mozzarella cheese (cubed into small bite-sized pieces)
  • Fresh herbs (like parsley or chives), finely chopped (optional)

For Breading:

  • 1/2 cup all-purpose flour
  • 1 egg, beaten
  • 1 cup breadcrumbs (panko for extra crispiness)

For Garlic Butter:

  • 2 tbsp butter
  • 2–3 garlic cloves, finely minced
  • 1 tbsp fresh parsley, chopped
  • A pinch of salt

Instructions:

  1. Prepare Potato Mixture:
    • Mash the boiled potatoes while they’re still warm.
    • Mix in salt, pepper, paprika, cornstarch, and herbs if using.
    • Let it cool slightly.
  2. Form the Bombs:
    • Take a tablespoon of the potato mixture, flatten it slightly in your palm.
    • Place a cube of mozzarella in the center.
    • Encase the cheese with the potato mixture and roll into a ball.
    • Repeat until all the mixture is used.
  3. Bread the Bombs:
    • Roll each bomb in flour, then dip in beaten egg, and finally coat with breadcrumbs.
    • Place them on a tray and chill in the fridge for 20–30 minutes (helps keep their shape when frying).
  4. Fry:
    • Heat oil in a deep pan over medium heat.
    • Fry the bombs in batches until golden brown and crispy (about 2–3 minutes each).
    • Drain on paper towels.
  5. Make Garlic Butter:
    • Melt butter in a small pan.
    • Add minced garlic and cook on low heat until fragrant (about 1–2 minutes).
    • Stir in chopped parsley and a pinch of salt.
  6. Serve:
    • Drizzle or brush garlic butter over hot potato cheese bombs.
    • Serve immediately with a dip like ranch, marinara, or spicy mayo.

🔥 Tips:

  • You can bake or air-fry the bombs at 200°C (390°F) for 15–20 minutes for a lighter version.
  • Experiment with different cheeses: cheddar, pepper jack, or a bit of brie for variation.
  • Add cooked crumbled bacon or jalapeños to the potato mix for extra flavor.
