Crepes Recipe!

Here’s a simple and delicious recipe for making crepes:

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk (whole milk works best)
  • 2 tbsp melted butter (plus extra for greasing the pan)
  • 1 tsp vanilla extract (optional)
  • 1/4 tsp salt
  • 1 tbsp sugar (optional for sweet crepes)

Instructions:

  1. Make the batter:
    • In a medium mixing bowl, whisk together the flour, eggs, milk, melted butter, vanilla extract (if using), salt, and sugar (if using). Whisk until smooth and free of lumps.
    • The batter should be thin and liquid, similar to heavy cream. If it’s too thick, you can add a little more milk to reach the desired consistency.
  2. Rest the batter (optional but recommended):
    • Let the batter rest for at least 30 minutes at room temperature. This allows the flour to fully hydrate and makes the crepes more tender. You can also make the batter ahead of time and refrigerate it for up to 24 hours.
  3. Cook the crepes:
    • Heat a non-stick skillet or crepe pan over medium-high heat. Lightly grease the pan with a bit of butter or cooking spray.
    • Once the pan is hot, pour a small amount of batter (about 1/4 cup) into the center of the pan. Quickly tilt and swirl the pan to spread the batter into a thin, even layer across the bottom.
    • Cook for about 1-2 minutes, until the edges begin to lift and the bottom is golden brown. Flip the crepe carefully using a spatula and cook for another 30 seconds to 1 minute on the other side.
    • Remove the crepe from the pan and place it on a plate. You can stack the crepes with a piece of parchment paper between each to prevent sticking.
  4. Serve:
    • Serve the crepes warm with your favorite fillings or toppings, such as:
      • Fresh berries, whipped cream, and powdered sugar for a sweet option
      • Nutella, sliced bananas, and a sprinkle of chopped nuts
      • Ham, cheese, and spinach for a savory version
    • You can fold or roll the crepes as you like.
