🐔 Chicken Breast Stuffed with Asparagus
Ingredients:

2 large chicken breasts

6–8 fresh asparagus spears (trimmed)

½ cup shredded mozzarella (or Swiss cheese)

2 tablespoons grated Parmesan cheese (optional)

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

½ teaspoon paprika (optional)

Toothpicks or cooking twine
Instructions:

Prep the Chicken:

Butterfly the chicken breasts: Slice each breast horizontally (without cutting all the way through) and open it like a book.

Season inside with salt, pepper, and minced garlic.

Add the Filling:

Lay 3–4 asparagus spears in the center of each breast.

Sprinkle mozzarella (and Parmesan, if using) over the asparagus.

Secure:

Fold the chicken over the filling and secure with toothpicks or tie with kitchen twine.

Season the outside with a bit more salt, pepper, and paprika.

Cook:

Option 1: Pan + Oven

Heat olive oil in an oven-safe skillet over medium-high heat.

Sear chicken on both sides (2–3 minutes per side).

Transfer to a 375°F (190°C) oven and bake for 15–20 minutes, or until internal temp reaches 165°F (74°C).

Place stuffed breasts in a baking dish.

Drizzle with olive oil.

Bake at 375°F (190°C) for 25–30 minutes.

Let the chicken rest 5 minutes before slicing.
