Here’s a rich, creamy, and cheesy Good Ole Fashioned Mac and Cheese recipe — Southern-style comfort food at its best, baked to golden perfection.


🧀 Good Ole Fashion Mac and Cheese (Baked)

Ingredients:

  • 1 lb elbow macaroni (or pasta of choice)

  • 4 tablespoons (½ stick) unsalted butter

  • ¼ cup all-purpose flour

  • 3 cups whole milk (warm)

  • 1 cup heavy cream (optional for extra richness)

  • 2½ to 3 cups shredded sharp cheddar cheese (divided)

  • 1 cup shredded mozzarella or Monterey Jack (optional blend)

  • ½ teaspoon salt (or to taste)

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder (optional)

  • ½ teaspoon dry mustard or a dash of hot sauce (optional for flavor kick)

  • ½ cup grated Parmesan cheese (for topping, optional)

  • ½ cup breadcrumbs or crushed crackers (optional topping)


Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. Cook the pasta:
    Boil macaroni in salted water until just al dente. Drain and set aside.

  3. Make the roux:
    In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes, stirring constantly to remove the raw flour taste.

  4. Add milk and cream:
    Slowly whisk in warm milk and cream. Stir constantly until mixture thickens into a smooth sauce (about 5–7 minutes).

  5. Add cheese and seasonings:
    Remove from heat and stir in 2 cups cheddar and mozzarella until melted. Season with salt, pepper, and optional spices.

  6. Combine with pasta:
    Mix the cheese sauce with cooked pasta until evenly coated.

  7. Assemble and bake:
    Pour into the prepared baking dish. Top with remaining cheddar, Parmesan, and breadcrumbs if using. Bake uncovered for 20–25 minutes, or until bubbly and golden on top.

  8. Let it rest:
    Allow to cool slightly before serving so it sets up a bit.


📝 Tips:

  • For extra creaminess, stir in a bit of cream cheese or Velveeta.

  • Make it ahead by assembling, covering, and refrigerating before baking.

  • Add-ins: crumbled bacon, sautéed onions, or diced jalapeños for variation.
