Here’s a simple and refreshing summer salad with tomatoes β€” perfect for hot days, barbecues, or light meals. This one highlights the natural sweetness of ripe tomatoes with fresh, zesty, and herbal flavors.

Ingredients:

  • 4–5 ripe tomatoes (heirloom, cherry, grape, or any mix), sliced or halved

  • 1 small red onion, thinly sliced

  • 1 cucumber, sliced or diced

  • Fresh basil leaves (a handful), torn

  • 1–2 tbsp extra virgin olive oil

  • 1 tbsp balsamic vinegar or red wine vinegar

  • Salt and freshly ground black pepper, to taste

  • Optional Add-ins:

    • Fresh mozzarella or feta cheese

    • Avocado slices

    • Kalamata olives

    • A pinch of crushed red pepper flakes


Instructions:

  1. Prepare the vegetables:

    • Slice the tomatoes, cucumber, and onion. Add to a large bowl.

  2. Add herbs and extras:

    • Toss in the torn basil leaves and any optional add-ins (like cheese or avocado).

  3. Dress the salad:

    • Drizzle with olive oil and vinegar. Sprinkle with salt and pepper.

    • Gently toss to combine, being careful not to mash the tomatoes.

  4. Chill or Serve:

    • Let it sit for 10–15 minutes to let the flavors meld, or serve immediately.

    • Optionally, chill for a bit before serving for a cooler, more refreshing bite.
