  • 1 lb ground beef

  • 1 small onion, diced

  • 3–4 medium potatoes, thinly sliced (Yukon Gold or Russets work well)

  • 1 can (10.5 oz) cream of mushroom soup (or cream of cheddar or chicken)

  • 1/2 cup milk

  • 1 1/2 cups shredded cheddar cheese (divided)

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika (optional)

  • Salt & pepper, to taste

  • Cooking spray or butter for greasing

  1. Preheat oven to 350Β°F (175Β°C). Lightly grease a 9×13-inch casserole dish.

  2. Brown the beef: In a skillet over medium heat, cook ground beef and diced onion until beef is no longer pink. Season with salt, pepper, garlic powder, and paprika. Drain excess grease.

  3. Mix the sauce: In a bowl, stir together cream of mushroom soup and milk until smooth.

  4. Assemble the layers:

    • Place half the sliced potatoes in the bottom of the casserole dish.

    • Top with half the ground beef mixture.

    • Pour half the soup mixture over the beef.

    • Sprinkle with 1/2 cup of cheese.

    • Repeat layers: potatoes, beef, soup mixture, 1/2 cup cheese.

  5. Cover with foil and bake for 60 minutes.

  6. Uncover, add remaining 1/2 cup of cheese, and bake uncovered for 15–20 minutes, until the cheese is melted and the potatoes are fork-tender.

  7. Let rest for 5–10 minutes before serving.
