-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
2 large eggs
-
3/4 cup milk
-
2 tbsp Worcestershire sauce

1/4 cup ketchup
-
1 tsp salt
-
1/2 tsp black pepper
-
1/2 tsp dried thyme (optional)
-
1 tbsp chopped parsley (optional)
For the Glaze:
-
1/2 cup ketchup
-
2 tbsp brown sugar
-
1 tbsp Dijon mustard or yellow mustard
-
1 tsp Worcestershire sauce (optional)
🥣 Instructions:
-
Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet with parchment.
-
Mix the meatloaf: In a large bowl, combine all meatloaf ingredients. Use clean hands or a spatula to mix until just combined—don’t overmix.
-
Shape: Press mixture into a loaf shape and place in prepared loaf pan or shape free-form on a baking sheet.
-
Prepare the glaze: In a small bowl, whisk together ketchup, brown sugar, mustard, and Worcestershire.
-
Top & bake: Spread half the glaze over the top of the meatloaf. Bake for 45 minutes.
-
Glaze again: After 45 minutes, spread remaining glaze on top and return to oven for another 15–20 minutes, or until internal temp reaches 160°F (71°C).
-
Rest & serve: Let meatloaf rest for 10 minutes before slicing. This helps keep it juicy.
🔄 Tips & Variations:
-
Moisture trick: Don’t skip the milk and eggs—they’re key to a tender loaf.
-
Mix of meats: Try a 50/50 mix of ground beef and pork or veal for more flavor.
-
Make ahead: Prepare and refrigerate the uncooked loaf up to 1 day ahead.
