Classic Baked Meatloaf

Here’s a tried-and-true Classic Baked Meatloaf recipe—juicy, savory, and topped with a sweet and tangy glaze. Perfect for a comforting family dinner!


🍽️ Classic Baked Meatloaf

🧂 Ingredients:

For the Meatloaf:

  • 2 lbs ground beef (80/20 recommended)

  • 1 cup breadcrumbs (plain or Italian-style)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 large eggs

  • 3/4 cup milk

  • 2 tbsp Worcestershire sauce

  • 1/4 cup ketchup

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp dried thyme (optional)

  • 1 tbsp chopped parsley (optional)

For the Glaze:

  • 1/2 cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp Dijon mustard or yellow mustard

  • 1 tsp Worcestershire sauce (optional)


🥣 Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet with parchment.

  2. Mix the meatloaf: In a large bowl, combine all meatloaf ingredients. Use clean hands or a spatula to mix until just combined—don’t overmix.

  3. Shape: Press mixture into a loaf shape and place in prepared loaf pan or shape free-form on a baking sheet.

  4. Prepare the glaze: In a small bowl, whisk together ketchup, brown sugar, mustard, and Worcestershire.

  5. Top & bake: Spread half the glaze over the top of the meatloaf. Bake for 45 minutes.

  6. Glaze again: After 45 minutes, spread remaining glaze on top and return to oven for another 15–20 minutes, or until internal temp reaches 160°F (71°C).

  7. Rest & serve: Let meatloaf rest for 10 minutes before slicing. This helps keep it juicy.


🔄 Tips & Variations:

  • Moisture trick: Don’t skip the milk and eggs—they’re key to a tender loaf.

  • Mix of meats: Try a 50/50 mix of ground beef and pork or veal for more flavor.

  • Make ahead: Prepare and refrigerate the uncooked loaf up to 1 day ahead.
