Slow Cooker Strawberries

Making slow cooker strawberries is a simple and delicious way to create a sweet topping or base for desserts, breakfasts, or snacks. They’re essentially stewed strawberries that can be used for yogurt, pancakes, ice cream, toast, or even cocktails. Here’s a basic recipe:


🍓 Slow Cooker Strawberries Recipe

Ingredients:

  • 4 cups fresh strawberries, hulled and halved (or quartered if large)

  • ½ cup granulated sugar (adjust to taste)

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract (optional)

  • Pinch of salt

Optional Add-Ins:

  • 1–2 tbsp chia seeds (to make it into a jam)

  • Fresh mint or basil for garnish

  • A cinnamon stick for warmth


Instructions:

  1. Prep Strawberries:
    Wash, hull, and halve (or quarter) the strawberries.

  2. Combine Ingredients:
    Add strawberries, sugar, lemon juice, and salt to the slow cooker. Stir to coat evenly.

  3. Cook:

    • Cover and cook on LOW for 2–3 hours or HIGH for 1–1.5 hours.

    • Stir occasionally if you’re around, but it’s not strictly necessary.

  4. Finish:

    • Once soft and syrupy, stir in the vanilla extract.

    • (Optional) For a thicker, jam-like consistency, mash slightly and stir in chia seeds. Let sit for 10–15 minutes to thicken.

  5. Cool and Store:
    Let cool, then transfer to jars or containers. Store in the refrigerator for up to a week, or freeze for up to 3 months.


Serving Ideas:

  • Over Greek yogurt or oatmeal

  • As a topping for waffles, pancakes, or French toast

  • Layered in parfaits or trifles

  • Swirled into cheesecake batter or milkshakes

  • Spoon over vanilla ice cream or angel food cake
