Here’s a delicious recipe for Cheesy Mashed Potato Muffins with Eggs – a hearty, grab-and-go breakfast or side dish that’s packed with protein and flavor!


🧀 Cheesy Mashed Potato Muffins with Eggs

⭐️ Ingredients (Makes 12 muffins):

  • 2 cups mashed potatoes (leftovers work great)

  • 1 cup shredded cheddar cheese (or any cheese you like)

  • ¼ cup milk

  • 2 green onions, finely chopped (optional)

  • Salt & pepper, to taste

  • ½ tsp garlic powder (optional)

  • 4 large eggs

  • ½ cup cooked and crumbled bacon or diced ham (optional)

  • Butter or oil spray (for greasing muffin tin)


🧁 Instructions:

1. Preheat Oven:

  • Preheat to 375°F (190°C).

  • Grease a 12-cup muffin tin with butter or cooking spray.

2. Make the Potato Base:

  • In a large bowl, mix the mashed potatoes, cheese, milk, green onions, garlic powder, and salt & pepper.

  • Mix until well combined and smooth.

3. Add the Eggs:

  • Lightly beat the eggs in a separate bowl.

  • Add eggs to the potato mixture and mix until fully combined.

  • Stir in cooked bacon or ham if using.

4. Scoop into Muffin Tin:

  • Spoon the mixture evenly into the 12 muffin cups.

  • Optional: Sprinkle extra cheese or a pinch of paprika on top for color.

5. Bake:

  • Bake for 20–25 minutes, or until muffins are set and golden on top.

  • Let cool slightly before removing from the tin.
