Here’s a White Chocolate Strawberry Cheesecake recipe that’s creamy, indulgent, and bursting with flavor. Perfect for special occasions or when you want to treat yourself!


🍓 White Chocolate Strawberry Cheesecake

⭐️ Ingredients:

Crust:
  • 1 ½ cups graham cracker crumbs (or digestive biscuits)
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted
Filling:
  • 1 cup white chocolate chips (or chopped white chocolate bar)
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup fresh strawberries, chopped
Strawberry Topping:
  • 1 ½ cups strawberries, hulled and sliced
  • ¼ cup granulated sugar
  • 1 tsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)

🧁 Instructions:

1. Prepare the crust:
  • Preheat oven to 325°F (163°C).
  • Mix graham cracker crumbs, sugar, and melted butter until combined.
  • Press into the bottom of a 9-inch springform pan.
  • Bake for 8–10 minutes, then cool.
2. Make the filling:
  • Melt white chocolate in a microwave or double boiler until smooth. Let cool slightly.
  • Beat cream cheese until smooth and creamy.
  • Add sugar and mix well.
  • Mix in eggs one at a time.
  • Stir in vanilla, sour cream, and melted white chocolate.
  • Gently fold in chopped strawberries.
3. Bake the cheesecake:
  • Pour filling into the cooled crust.
  • Bake at 325°F (163°C) for 55–65 minutes, or until center is just set.
  • Turn off oven, crack door, and let cheesecake sit for 1 hour.
  • Chill in the fridge for at least 4 hours, preferably overnight.
4. Prepare the topping:
  • In a saucepan, combine strawberries, sugar, and lemon juice over medium heat.
  • Cook until strawberries break down and sauce thickens slightly (add cornstarch slurry if needed).
  • Cool completely before spooning over the chilled cheesecake.

🥄 Tips:

  • Use room temperature ingredients for a smooth filling.
  • Wrap the springform pan in foil and bake in a water bath for a crack-free top.
  • For an extra touch, garnish with whipped cream and white chocolate shavings.
