🧀 Baked Macaroni and Cheese

🍽️ Serves: 6–8

⏱️ Total Time: ~45 minutes

📦 Comfort food level: 10/10

📝 Ingredients

For the Pasta:

  • 1 lb (16 oz) elbow macaroni

  • Salt (for boiling water)

For the Cheese Sauce:

  • 4 tbsp (1/2 stick) unsalted butter

  • 1/4 cup all-purpose flour

  • 3 cups whole milk (warm)

  • 1 cup heavy cream (or more milk)

  • 3 cups shredded sharp cheddar cheese

  • 1 cup shredded mozzarella or Monterey Jack

  • 1/2 tsp garlic powder (optional)

  • 1/2 tsp mustard powder (or 1 tsp Dijon)

  • Salt and black pepper to taste

Topping:

  • 1/2 cup panko breadcrumbs

  • 1 tbsp melted butter

  • 1/2 cup shredded cheddar (optional, for extra cheesy top)

👩‍🍳 Instructions

1. Cook the Pasta

  • Preheat oven to 375°F (190°C).

  • Bring a large pot of salted water to a boil.

  • Cook pasta until just al dente (1–2 minutes less than package time).

  • Drain and set aside.

2. Make the Roux & Cheese Sauce

  • In a large saucepan, melt butter over medium heat.

  • Whisk in flour and cook for about 1–2 minutes to form a roux (it should bubble but not brown).

  • Gradually whisk in warm milk and cream until smooth.

  • Bring to a gentle simmer and stir until thickened (about 5–7 minutes).

  • Stir in cheddar and mozzarella until melted and smooth.

  • Add garlic powder, mustard, salt, and pepper to taste.

3. Combine & Transfer

  • Stir drained pasta into the cheese sauce until evenly coated.

  • Pour into a greased 9×13-inch baking dish.

4. Add Topping

  • In a small bowl, mix panko with melted butter.

  • Sprinkle over mac and cheese along with extra shredded cheddar (if using).

5. Bake

  • Bake uncovered for 20–25 minutes, or until bubbly and golden brown on top.

  • Optional: Broil for 1–2 minutes for extra crispiness (watch closely!).

6. Cool Slightly & Serve

  • Let sit for 5 minutes before serving so it sets up.

🧂 Variations:

  • Spicy: Add chopped jalapeños, hot sauce, or cayenne to the sauce.

  • Meaty: Stir in cooked bacon, ham, or crumbled sausage.

  • Breadcrumb-free: Skip the topping for a creamier finish.
