Here’s a simple and irresistible recipe for Cheesy Baked Squash Rounds—a great side dish or healthy snack that’s crispy, cheesy, and easy to make!


🧀 Cheesy Baked Squash Rounds

Ingredients:

  • 2 medium yellow squash or zucchini (or a mix), sliced into 1/4-inch rounds

  • 1 tablespoon olive oil

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt (or to taste)

  • 1/4 teaspoon black pepper

  • 1/2 cup shredded Parmesan cheese (or a mix with mozzarella for extra melt)

  • Optional: fresh herbs (parsley, thyme, or basil) for garnish


Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prep the squash:

    • Slice squash into 1/4-inch rounds.

    • Toss slices with olive oil, garlic powder, salt, and pepper.

  3. Arrange on baking sheet:

    • Lay the squash rounds in a single layer, not overlapping.

  4. Top with cheese:

    • Sprinkle a generous pinch of Parmesan on each round (you can mix with shredded mozzarella or cheddar for variety).

  5. Bake:

    • Bake for 15–20 minutes, or until the squash is tender and the cheese is golden and slightly crispy.

  6. Serve:

    • Let cool slightly. Garnish with herbs if desired and serve warm.


✅ Tips & Variations:

  • Crispier version? Broil for the last 2–3 minutes.

  • Add breadcrumbs on top for a crunchier bite.

  • Use air fryer at 375°F for about 8–10 minutes for faster results.

  • Try with eggplant rounds or sweet potato slices for variation.
