Here’s a quick and easy Air Fryer Breakfast Casserole recipe—perfect for busy mornings, meal prep, or a high-protein brunch!


🍳 Air Fryer Breakfast Casserole (Single Basket or Oven-Style Air Fryer)

Ingredients (Serves 2–4):

  • 4 large eggs

  • 1/3 cup milk (dairy or plant-based)

  • 1/2 cup cooked breakfast sausage (or bacon/veggie sausage), crumbled

  • 1/2 cup shredded cheddar cheese (or preferred cheese)

  • 1/2 cup diced bell peppers

  • 1/4 cup chopped onion

  • 1/2 cup diced cooked potatoes or hash browns (optional)

  • Salt & pepper, to taste

  • Optional: chopped spinach, tomatoes, mushrooms


Instructions:

  1. Preheat Air Fryer:

    • Preheat to 350°F (175°C) for 3–5 minutes.

  2. Prepare the Baking Dish:

    • Lightly grease a small, oven-safe dish (like a 6-inch round cake pan, ramekin, or mini loaf pan) that fits in your air fryer.

  3. Mix the Ingredients:

    • In a mixing bowl, whisk together the eggs, milk, salt, and pepper.

    • Stir in cooked sausage, cheese, veggies, and potatoes if using.

  4. Pour & Cook:

    • Pour the egg mixture into the greased dish.

    • Place it in the air fryer basket.

  5. Air Fry:

    • Cook at 350°F (175°C) for 15–20 minutes, or until the eggs are fully set and the top is golden.

    • Check doneness with a toothpick—if it comes out clean, it’s done.

  6. Rest & Serve:

    • Let cool for 3–5 minutes before slicing. Serve warm.


🔁 Variations:

  • Keto/Low Carb: Skip the potatoes and use extra veggies or meat.

  • Vegetarian: Use plant-based sausage and extra vegetables.

  • Mini Muffin Style: Pour into silicone muffin cups and reduce cook time to 10–12 minutes.
